You will not see the specular effect in the Wings3D interface. You would only see it in a render when using rendering software which supports that feature.
When you export to a gaming software I imagine that the gloss/specular map would look different in the gaming software???
The only map that will look different from diffuse in the Wings3D interface, will be a Bump/Normal map. That is assuming your video card supports that feature.
Edit: Make sure that View > Show > Show Normal Maps is enabled. I have to have View > One Light/Two Lights set to Two Lights. You also have to use Hemispherical Lighting (View > Shaders: Hemispherical Lighting.)
